When I first heard chia seeds could replace eggs in most baking recipes, I had to see it with my own eyes...and taste buds.
I pulled a trusty bag of Toll House semi sweet morsels from the pantry and whipped up a chia seed batch of this old faithful recipe. End result? They actually turned out better than the OG version.
Chia seeds have been working their tasty magic for centuries; these little seeds are not only flavorful and packed with protein, omega-3’s, magnesium, and fiber, but it turns out they’re also great for baking.
The recipe below is to replace one egg. Recipe calls for two eggs? No sweat, just double it!
INGREDIENTS
1 tablespoons chia seeds
3 tablespoons water
INSTRUCTIONS
1. Use a mortar & pestle or food processor to grind the chia seeds into a meal (optional)
2. Mix the chia seeds and water together in a small bowl.
3. Place mixture on the fridge, and let it sit for 10 – 15 minutes until the mixture becomes a gel.
4. Add to recipe in place of one egg
